Day 3 – Drive to Colorado Springs

Sunday was perhaps the laziest and least-planned day of our trip, and it began with a fun, inclusive brunch at the Bagel Deli & Restaurant, near our hotel in southern Denver. (We ate with Ashley, her boyfriend Jeremy, and Austin.) The bagels were great, the “baken” (beef made in the style of pork bacon) was interesting, and the service was good.

After shopping at Park Meadows Mall and the Castle Rock Outlets, we made a rather inefficient stop at the Air Force Academy north of Colorado Springs. Dinner was at Shurga’s, a trendy sandwich cafe where I enjoyed the Cuban Mojo, Amanda ate theĀ Brick Chicken, and Noah ordered the grilled cheese.

Noah and I swam in the hotel’s pool – and he had a blast jumping off the side of the pool into my arms.
